no to paperwork this weekend.
So this morning I made Cranberry Muffins:
1/4 cup margarine
1 1/4 cup sugar
2 eggs
2 cups flour (1 cup white, 1 cup whole wheat pastry flour)
2 tsp baking pwdr
1/4 tsp salt
1/2 cup milk
2 cups cranberries
1 cup chopped walnuts
Cream margarine with sugar. Add eggs and beat until smooth. Sift flour with baking pwdr and salt. Add to misture alternately with milk. Add cranberries.
350 degrees for 25-30 minutes.
**I rarely use salt in a recipe and cannot tell the difference.
**I run the walnuts through my blender and chop them up fine. I like the taste better, but that is my personal preference.

Salt in recipes ~ Salt reacts with baking powder, to help a food to rise. It's a chemical reaction.
Now how in blazes do I know that?!? Moi who never *got* any chemistry or math or etc. lessons!
Probably because I'm married to a pharmacist. And pharmacists know chemistry. In fact he just said that "all cooking is chemistry." "Mix stuff and bake. Chemistry." :-)
I said that sounds like alchemy and he said... "It's that too!"
Now, don't you have more respect for your baking bowls and measures and pans and oven? :-))))
